My favorite non-meat meals that are perfect for Lenten Fridays

Ten years ago, I had to cut dairy out of my diet, which was devastating at the time. I have since learned how to eat plenty of things without cheese, many of which are vegan meals. This comes in very handy at Lent when we need meatless meals on Fridays. I thought I'd share some of my favorites with you!

Thai Peanut Curry
