My favorite non-meat meals that are perfect for Lenten Fridays
Ten years ago, I had to cut dairy out of my diet, which was devastating at the time. I have since learned how to eat plenty of things without cheese, many of which are vegan meals. This comes in very handy at Lent when we need meatless meals on Fridays. I thought I'd share some of my favorites with you!
1. Vegan Thai Peanut Curry
Delicious and easy, this Thai Peanut Curry by Six Feet Hungry is one of my go to meals.

This yummy salad is from Pinch of Yum. You could add shrimp or salmon as a protein in this salad or it's hearty enough to not need anything.
