Thai Peanut Curry

1. Vegan Thai Peanut Curry

Delicious and easy, this Thai Peanut Curry by Six Feet Hungry is one of my go to meals.

Cash crunch salad

2. Cashew Crunch Salad with Sesame Dressing

This yummy salad is from Pinch of Yum. You could add shrimp or salmon as a protein in this salad or it's hearty enough to not need anything.

Vegan Stir Fry

3. 30 Minute Vegan Stir Fry Sesame Noodles with Chickpeas & Basil

Ambitious Kitchen is one of my go to recipe blogs.

Vegan Tortilla Soup

4. Vegan Lentil Tortilla Soup

I made this tortilla soup recently when my parents were over for dinner and it was a hit with everyone.
